Breakfast Burrito with Avocado Crema

  • 4 Frescados Spinach Wraps
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 green pepper, seeded and chopped
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp each salt and cayenne pepper
  • 8 strips bacon, cooked and crumbled
  • 2 cups shredded iceberg lettuce
  • 2 tomatoes, diced
  • Lime wedges
  • Avocado Crema:
  • 1 ripe avocado
  • 1/4 cup mayonnaise or sour cream
  • 2 tsp lime juice
  • 1/2 tsp ground cumin
  • 1/4 tsp each salt and pepper


Heat oil in large skillet set over medium heat; sauté onion, green pepper, chili powder, cumin, salt and cayenne for about 8 minutes or until tender.

Avocado Crema: Meanwhile, remove pit from avocado; scoop out flesh. Mash together avocado, mayonnaise, lime juice, cumin, salt and pepper.

Place wraps on work surface; spread with crema. Divide bacon and green pepper mixture among wraps. Top with lettuce and tomatoes. Fold up bottom of wraps; fold in sides and roll up tightly. Serve with lime wedges.

Tip: Add scrambled eggs to wraps if desired.
