Strawberry Tortilla Pockets
- Yield: Makes 6–10 pockets
Ingredients
- 3 – 4 Frescados Burrito Style Flour Tortillas (8-inch)
- 1 cup strawberries
- 2 tsp lemon juice
- 2 tbsp sugar
- 2 tbsp cornstarch
- 4 tbsp water
- ½ tsp vanilla bean paste (or extract)
- 2 tbsp flour
- 1/3 cup icing sugar
- 1-2 tbsp heavy cream
- Sprinkles
Preparation
- Chop 1 cup strawberries and mix in 2 tsp lemon juice and 2 tbsp of sugar.
- Take strawberry mixture and microwave for 1 minute and 30 seconds, then mash slightly.
- In a separate bowl mix together 2 tbsp cornstarch, 2 tbsp water, and ½ tsp vanilla bean paste (or extract).
- Mix cornstarch mixture into mashed strawberries together, then microwave for 1-2 minutes until consistency is thick and jammy, then set aside.
- Cut Frescados Burrito Style Tortillas in half and fold into a pocket (cone shape).
- Create a flour paste by mixing 2 tbsp flour and 2 tbsp water in a small bowl.
- Use flour paste to seal edges of tortilla pockets.
- Spoon strawberry mixture into tortilla pockets.
- Once filled, spread more flour paste on the inside edge of tortilla pocket to close the pocket.
- Once pockets are closed, press down edges with a fork.
- Air-fry at 375 F for 5 – 8 minutes, until golden & crispy.
- In a bowl make a simple frosting by mixing 1/3 cup icing sugar 1-2 tbsp heavy cream.
- Spread simple frosting mixture onto pockets and decorate with sprinkles!
