Mean Green Egg Salad Wraps

  • 4 Frescados Whole Wheat Flour Tortillas, warmed
  • 1⁄3 cup mayonnaise
  • 2 Tbsp lemon juice
  • ½ salt
  • ¼ tsp each pepper and paprika
  • 8 eggs, hard-boiled, peeled and chopped
  • 1 ripe avocado, halved, pitted, peeled and mashed
  • 2 Tbsp finely chopped fresh parsley
  • 2 Tbsp finely chopped fresh basil
  • 1 Tbsp finely chopped fresh chives
  • 1 cup baby spinach
  • 1 cup sprouts
  • 1 cup sliced cucumbers


In large bowl, stir together mayonnaise, lemon juice, salt, pepper and paprika until blended. Fold in eggs, avocado, parsley, basil and chives.

Spoon egg salad down along center of each tortilla. Layer spinach, sprouts and cucumbers over top. Fold up bottom of tortilla over filling, then fold in sides and roll up tightly starting from bottom. To serve, cut each wrap in half.
