East Coast Shrimp Roll Wraps

Ingredients
- 3 tbsp mayonnaise
- 2 tbsp Greek yogurt
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 2 tsp Dijon mustard
- 2 stalks celery, diced
- 1/4 cup drained capers
- 2 tbsp finely chopped fresh chives
- 2 tbsp finely chopped fresh dill
- 1/2 tsp Old Bay seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 lb frozen cooked shrimp (peeled, deveined, tails-removed, 31–35 count), thawed and chopped
- 8 Frescados Carb Fit 2 Flour Tortillas
- 2 cups shredded cabbage
- 1 avocado, halved, peeled, pitted and sliced
Preperation
Prepared with frozen cooked shrimp, these quick and easy East Coast–inspired wraps are fresh, light and low-carb.
- In medium bowl, stir together mayonnaise, yogurt, lemon zest, lemon juice, Dijon, celery, capers, chives, dill, Old Bay seasoning, salt and pepper. Stir in shrimp.
- Warm tortillas according to package directions.
- Arrange shrimp mixture down center of each tortilla, leaving 1-inch border. Top with cabbage and avocado. Fold up bottom of tortillas over filling, then fold in sides and, starting from the bottom, roll up tightly. Cut in half to serve if desired.
Tips: Substitute Old Bay seasoning with taco seasoning or ranch dip seasoning for a variation.
Substitute shredded cabbage with shredded lettuce or arugula if preferred.
