Air Fryer Chickpea Tacos

Ingredients

  • 8 Frescados Fajita Style Tortillas (7 inches)
  • 1/2 tsp chipotle chile powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp brown sugar
  • 1 can (19 oz) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 2 tsp freshly grated lime zest
  • Carrot Slaw: 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp liquid honey
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1 bag (10 oz) matchstick carrots
  • 1 jalapeño pepper, seeded and diced
  • Avocado Crema: 1 avocado, peeled, halved and pitted
  • 1/2 cup sour cream
  • 1 tbsp freshly grated lime zest
  • 1/4 cup freshly squeezed lime juice
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 cup crumbled cotija cheese
  • 1/2 cup fresh cilantro sprigs
  • Lime wedges, for serving

Preperation

PREPARATION

  1. Tacos: In small bowl, stir together chili powder, cumin, salt, black pepper, brown sugar and garlic powder.
  2. In medium bowl, toss chickpeas with oil, lime zest and chili powder mixture until well coated.
  3. Preheat air fryer to 400°F according to manufacturer’s instructions.
  4. Add chickpeas mixture to air-fryer basket. Cook, tossing halfway through, for 12 to 15 minutes or until deep golden brown and crispy.
  5. Meanwhile, warm tortillas according to package directions.
  6. Carrot Slaw: In medium bowl, whisk together oil, vinegar, honey, mustard, garlic and salt. Stir in carrots and jalapeño until coated.
  7. Avocado Crema: To blender, add avocado, sour cream, lime zest, lime juice, cumin and salt. Blend until smooth.
  8. Assemble chickpeas in warm tortillas with slaw, crema, cotija and cilantro. Serve with lime wedges.

 

Tips: Alternatively, arrange chickpeas in single layer on baking sheet and bake in preheated 425°F oven for 15 to 20 minutes or until golden brown and crispy.

Substitute lime zest and seasoning mixture from Step 1 with store-bought Tajin seasoning if desired.

Substitute matchstick carrots with shredded carrots if preferred.
