Frescados was founded in 2010 by Cathy Cruz Gooch, a Mexican American mom whose family has been making tortillas on a large scale for more than 30 years.
Cathy and her family launched Cruz Tortillas in 1985, drawing on her culinary background to create tortillas, burritos and tortilla chips for Minnesota grocery stores and restaurants. By 1989, the company had expanded to 23 states.
In the early 1990s, the Cruz brand was sold and Cathy launched Catalina Specialty Foods, and began building a successful tortilla brand for foodservice customers.
In 2005, to better meet customer demand and realizing their dream of opening their own tortilla facility, Cathy and her husband opened their own state-of-the-art facility under the company name Catallia Mexican Foods, in joint venture with Cargill Kitchen Solutions.
Soon afterwards, Frescados was launched, and to expand product offering, Catallia began corn tortilla manufacturing in 2014. Today, the Frescados brand is part of the Catallia portfolio under the SQF (Safe Quality Food) quality standards and one of the leading producers of tortillas in the country. Their three adult children also work in the business.
