Huevos Rancheros Salsa Verde
Ingredients
- 5 tomatillos, skins removed and rinsed
- 1/2 a jalapeno, cut in half
- 3 tbl chopped cilantro
- 1/4 cup onion, chopped
- 1/4 tsp cumin
- 1 garlic clove
- 1/2 tsp salt
Preparation
Combine the salsa verde ingredients in a blender and blend to combine. Toast corn tortillas over an open flame or in the oven and top with your favorite refried beans, a spoonful of salsa, a fried egg and your favorite toppings. Try them with some sliced avocado, sliced radishes, microgreens and a little hot sauce.
