Avocado & Black Bean Tuna Salad Wrap

  • 4 Frescados Garden Vegetable Wraps
  • 2 cans (6 oz each) tuna, drained and flaked
  • 1/4 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tsp lime zest
  • 3 tbsp lime juice
  • 1 tsp ground cumin
  • 1 clove garlic, minced
  • 1/2 tsp each salt and pepper
  • 1/2 tsp each salt and pepper
  • 1 ripe avocado, halved, pitted, peeled and chopped
  • 2 green onions, finely sliced
  • 1 small jalapeño pepper, seeded and diced
  • 2 tbsp finely chopped fresh cilantro
  • 1 cup canned black beans, drained and rinsed
  • 1 cup baby spinach
  • 1/2 cup alfalfa sprouts
  • 1/2 cup cooked corn kernels, cooled


Mix together tuna, mayonnaise, sour cream, lime zest, lime juice, cumin, garlic, salt and pepper. Stir in avocado, green onions, jalapeño and cilantro.

Arrange tortillas on work surface. Spread tuna mixture down along center of each tortilla, leaving small border on either end. Top with black beans, spinach, alfalfa sprouts and corn.

Fold up bottom of tortillas over filling, then fold in sides and roll up tightly. To serve, cut in half.

Tip: Substitute arugula or baby kale for spinach if desired.
